Sweet and Crunchy Low-calorie Coleslaw

A low-calorie version of the Chick-fil-A coleslaw.

Equipment

  • Large serving bowl
  • small mixing bowl
  • measuring cups and spoons
  • strainer
  • mixing/serving spoon
  • Whisk

Ingredients

  • ½ cup light mayonnaise
  • 4 Tablespoons monk fruit no-calorie sweetener, like Lakanto
  • 2 tsp dill pickle juice (or apple cider vinegar)
  • ½ tsp celery seed
  • tsp ground mustard
  • tsp salt
  • 16 oz bag of coleslaw mix (I like the Walmart tri-colored slaw mix. It's pretty.)

Instructions

  • Whisk the first 6 ingredients in a small bowl until creamy.
  • Add the coleslaw mix to a large serving bowl, and pour the mayonnaise mixture over the coleslaw mix.
  • Stir until combined and eat immediately or chill for 30 minutes.

Notes

Monk fruit is a natural, no-calorie sweetener and perfect for those watching their weight or have diabetes.  I've included a link to it below.
Keep in mind, the longer coleslaw sits, whether in the fridge or not, the juicier and softer it becomes.  Therefore, it may not seem that there are enough wet ingredients for the slaw mixture when first mixing.  If you want your slaw to be super crunchy be sure to mix it right before serving/eating.
You don't have to use a pre-made slaw mix!  Feel free to use different colored cabbages, sliced broccoli stalks, and carrots in your own slaw.
