Homemade Pie Crust

Ingredients

  • 2 ½ cups all-purpose flour (using levelling technique for measuring flour)
  • 1 cup unsalted butter, chilled (or 2 sticks)
  • ½ tsp salt
  • 7 Tbsp ice water
  • 1 Tbsp apple cider vinegar

Instructions

  • Add the flour, butter, and salt to a food processor. PULSE only until the mixture resembles coarse crumbles. Do not overmix.
  • Mix the ice water and vinegar in a small bowl.
  • Add 1/2 of the water-vinegar solution to the processor and PULSE for approximately 10 pulses.
  • Add the remaining water-vinegar solution and PULSE until mixture JUST comes together to form a soft dough. Do not overmix.
  • Turn the dough out onto a piece of parchment paper. Use hands to form a round shape so that you can evenly divide in half.
  • Wrap each half in plastic wrap and chill for 30 minutes or use right away. These crusts also freeze very well!
  • When you're ready to use, roll out on a piece of large parchment paper and insert the crust into a pie dish to use in your favorite recipes.

Notes

Tips:
Be sure your butter is chilled and you're using ice water.
Also, try not to overmix the dough.
Use parchment paper for easy cleanup after rolling out the dough and drop a couple of tablespoons of water between the paper and the counter to keep the paper from moving around too much.
Roll the dough very thin; you want to taste the yummy end result, but it's not the show -- just a supporting actor!
