Ingredients
6eggs
1cupcottage cheese, 2 % milkfat
¾cupsharp cheddar cheese, shredded
⅔cupparmesan cheese, grated
2Tablespoonsjalapeños (jarred or fresh with seeds removed), chopped
1½tspPenzeys Justice spice blend*
¼tsppepper
1½cupscooked ham, diced
Cooking spray
Instructions
Preheat oven to 350°.
Spray the inside of a pie dish with cooking spray.
In a large mixing bowl, whisk the eggs.
Add the next 6 ingredients and whisk together.
Stir in the ham using a rubber spatula or wooden spoon.
Pour into the prepared pie dish and bake for 35 minutes.
Let stand for 5 minutes after removing from oven. Enjoy warm, cold, or room temp!
Notes
You can use additional veggies as well, such as mushrooms, onions, bell peppers, and spinach. Just keep in mind that these ingredients contain additional water and need to be sautéed prior to adding to the rest of the ingredients and baking.
